Turkey Meatballs

The mushrooms in these meatballs help give a moistness and earthiness that jazz up otherwise dull turkey.

1 lb ground turkey
1/2 onion
2 mushrooms
1 clove garlic
1 tsp fresh thyme
1 Tbl fresh parsley
1 egg white
1/4 - 1/2 cup seasoned italian breadcrumbs

Preheat oven to 350. Chop onion, mushroom, garlic, thyme and parsley in food processor. Put mixture into mixing bowl. Add turkey, egg white, breadcrumbs, salt and pepper. Make a mini meatball. Sauté the mini meatball on stovetop, try the mini meatball for seasoning, correct the main batch if necessary. Form the meatballs into the size of about a golf ball. Place into an 8 x 8 oven safe pan that has been sprayed with nonstick spray. Bake meatballs for 20 - 30 minutes, or until a meat thermometer reads 165.
