Greek Salad

I grow fresh herbs in my garden, which saves a lot of money and adds loads of flavor. Dried Herbs will work as an alternative.

2 hearts of romaine, chopped
1/2 cucumber, peeled, seeded and diced
1/4 cup feta cheese, crumbled
1 Tbl fresh mint, chopped
1/4 red onion roughly chopped
1/4 cup Kalmata olives, roughly chopped
1 tsp oregano, chopped
Pinch of salt

Put lettuce in bowl. Top with remaining ingredients. Can be made ahead, up to 4 hours. If salad will be sitting for more than an hour, dampen a paper towel(wringing out excess water) and cover. Dress with Greek Dressing.

Greek Dressing:

Juice of 1 lemon
2 Tbl white wine vinegar
2 Tbl honey
1 Tbl finely chopped onion
1 garlic clove
1 tsp dried oregano
1 tsp salt
1/4 - 1/2 c olive oil

Combine first 7 ingredients in a small bowl. Whisk in oil. I combine everything in a small jar and shake well. Leave the garlic clove whole and remove when dressing the salad.
