Grilled Lemon Procuitto Chicken

 

 


This was first inspired from a Bobby Flay cooking show that used ingredients that I already had in the fridge. Turned out to be a winner and has become a regular in the rotation. For the cheese portion, any melting cheese that is on hand will work. Procuitto can be expensive, so to save $$, I buy it in bulk at Costco, then freeze in small portion sizes.

Serves 2

2 boneless, skinnless chicken breast
4 oz white melting cheese, such as Swiss or Monterrey Jack
4 slices Procuitto
1 lemon
Salt and pepper
1 tsp olive Oil

Heat grill to high. Place one of the chicken breast between two pieces of plastic wrap on a cutting board. Using a meat maillot or rolling pin, pound the breast fron the center out until they are approximately 1/4 inch thick. Repeat with remaining breast. Brush the breasts with olive oil, sprinkle with salt and pepper. Grill breasts for 5 minutes on one side. Slice lemon in half and place, flesh side down, on grill. Turn breast over and place cheese on grilled side of chicken. Top with each breast with two slices of Procuitto. Once the cheese melts, it hold the procuitto in place. Cover grill for 2 - 3 more minutes. Remove chicken and lemon. Squeeze grilled lemon juice on chicken. Serve immediately.
