This is similar to Asian Cole Slaw, with a mexican style dressing. White wine vinegar is called for in the dressing, but red wine vinegar could be substituted. It's a personal preference.
1 small head of cabbage, shredded
1 red pepper, sliced into long, thin strips
1/4 cup cilantro, chopped
1/4 cup shredded carrot
Combine all ingredients in large mixing bowl. Toss with dressing and serve. May be refrigerated for up to 4 hours. Toss before serving.
Dressing:
Juice of 1 small lime
2 Tbl white wine vinegar
1 tsp ground cumin
1 Tbl honey
1/2 tsp salt
Pinch of pepper
1/4 c. Canola oil
Combine first 6 ingredients in small mixing bowl. Whisk in canola oil.
